What is KUEH bangkit made of?
Kuih Bangkit is a traditional Chinese New Year cookies and it is made mainly from tapioca flour, eggs and coconut milk. It is a cookie that is hard on the outside but melts in your mouth.
Why is my kuih bangkit so hard?
If the flour isn’t dry enough, the Kuih Bangkit will neither crumble nor melt in the mouth. The presence of water will result in a hard cookie. I used to use fresh coconut milk from the first press at my first attempt in 2014.
How long can KUEH bangkit last?
Store in an air-tight container once they’ve cooled down completely and they will last for 1 month at room temperature. It tastes the best the first week you made them.
